（1）小磨香油用水代法生產(chǎn)，芝麻醬，此法主要是利用油料中非油成分對油和水的親和力差異，并利用油水比重不同而將油脂與其它物質(zhì)分離。對人體健康不利的重金屬化合物因比重較大而沉淀醬渣中，從而避免了重金屬對人體的危害。

(1) Xiaomo sesame oil is produced by water instead of sesame paste. This method mainly uses the affinity difference of non oil components in oil to oil and water, and uses the different proportion of oil and water to separate oil from other substances. （2）機(jī)榨油只是用物理的壓榨方法把油強(qiáng)行擠出，所以芝麻中的重金屬化合物都混入油中，芝麻醬機(jī)，形成潛在隱患。

（3）部分機(jī)榨油由于壓榨取油不徹 底，廠家便采用化學(xué)溶劑浸出法取殘油，而化學(xué)溶劑又不凈，則導(dǎo)致化學(xué)溶劑殘留。食用后危害人體健康，而在標(biāo)準(zhǔn)中機(jī)制香油是不允許溶劑殘留檢出的

一般情況下為保留香油的香味，不會對這些浸出油再進(jìn)行脫溶和精煉，但是這部分廠家也深知浸出工藝對于香油風(fēng)味的負(fù)面影響，所以在上市時，采取了變通辦法：用小磨香油與機(jī)榨浸出的香油進(jìn)行勾兌，用以減輕浸出油的危害，并以此提高機(jī)榨、浸出香油的風(fēng)味，推向市場后就成了一般消費(fèi)者難以區(qū)別的“小磨香油”，實際上是一種對消費(fèi)者的欺騙行為，限于香油這一產(chǎn)品的特殊性，在食用時不經(jīng)熟鍋，而是直接倒入菜中食用（即香油是一種生食油），這樣如摻入有溶劑殘留的浸出油，就會影響消費(fèi)者的身體健康。

芝麻油根據(jù)香味特點(diǎn)分為兩類：一是香油，具有濃郁或顯著的芝麻油香味。芝麻中的有成分經(jīng)高溫炒料工藝處理后，生成具有特殊香味的物質(zhì)，致使芝麻油具有獨(dú)特的香味，有別于其他各種食用植物油，故稱香油。
