③ Grinding soybean milk: manually rotate a tofu stone mill to grind clean water and soybean slices into soybean milk. Usually, it is operated by two people, that is, one person keeps rotating the tofu stone mill and one person adds soybean and water according to the speed;

④過濾去渣：用一個密實(shí)的面粉袋裝上豆?jié){，然后用力將漿液擠出流一只木桶;

④ Filter and remove the residue: put soybean milk in a dense flour bag, and then squeeze the slurry out into a wooden bucket;

⑤煮沸：將純豆?jié){倒進(jìn)一個大鼎，經(jīng)煮沸后裝進(jìn)一個按比例配以石膏水的木桶里，并用一支木槳攪勻，然后讓其冷卻凝結(jié);

⑤ Boiling: pour pure soybean milk into a tripod, boil it, put it into a wooden bucket with gypsum water in proportion, mix it well with a wooden paddle, and then let it cool and set;

⑥加壓成形：取幾塊長約60×60×4厘米的槽形木板，板面呈方格狀，并各墊上一塊白布，然后用貝殼瓢將已凝結(jié)的豆腐花舀到幾塊木板槽里，用槽里的白布蓋住，再壓上一塊木板和石頭，令其減少含水量并成形。一個多小時(shí)后，搬開石頭和木板并將其反轉(zhuǎn)過來，除去白布，一板乳白色呈方格狀的豆腐便新鮮出爐了。

⑥ Pressure forming: take several pieces about 60 long × sixty × 4 cm trough shaped wood board, the board surface is in a square shape, and each is padded with a piece of white cloth. Then, use a shell ladle to scoop the condensed tofu flowers into several board slots, cover them with the white cloth in the slot, and then press a board and stone to reduce the water content and form them. After more than an hour, remove the stones and boards and turn them around, remove the white cloth, and a plate of milky white checkered tofu will be fresh out of the oven.
